This day has been celebrated for centuries, though probably started as a Pagan holiday to celebrate the arrival or spring, before Christian era. In many countries (especially the Commonwealth ones) this Tuesday is celebrated by consuming pancakes.
The reasons for consuming pancakes are quite practical and simple - to use up foods likes eggs and milk before the 7 week fasting period of Lent begins.
The date of Pancakes Day changes every year, since it’s determined by when Easter falls. But it is always the day preceding Ash Wednesday and always happens in February or early March.
